Ingredients :

For the crust base  you need :

  • A half cup of almonds
  • A ¾ cups of walnuts
  • A cup of Medjool Dates
  • A pinch of salt
  • A half teaspoon extract or bean of vanilla
  • A tablespoon of cacao butter
  • A little bit of water

For the cheesecake layer you need:

  • Three cups of raw cashew nuts (soaked overnight with water)
  • 1/3 cup of honey or maple syrup
  • 1/3 coconut oil
  • Four tablespoons of lime juice
  • A pinch of salt
  • A teaspoon of lime zest

Blueberry Topping :

  • A cup of fresh blueberries or frozen blueberry
  • Berry jam (optional)

Directions :

1Before you make the cheesecake layer, you have to make the crust first. Put the almonds, walnuts, Medjool dates, and another crust ingredients into the food processor, and mix it all until it becomes crumbly. After that, press the mixture firmly into bottom of the springform pan, and put it in the freezer.

2After that, it is time to make the filling. Place the soaked cashew nuts into the food processor, and blend it until it smooth. If the chasew already smooth, then add the coconut oil, lime juice, a pinch of salt, a little bit of lime zest, and maple syrup or honey to be the sweetener. Blend it again until it is well mixed.

3After all the ingredients of cheesecake layer well combined, you can start to take the springform pan that already filled with the crust from the freezer. Next, scoop out the cheesecake layer on the top of the crust up to a half or an inch of the layer. Set in the freezer again until it firms up. Don’t forget to keep at least a half cup of the mixture to make the topping.

4For the blueberry topping. Blend the fresh or frozen blueberries with the remaining mixture of cheesecake in your food processor. Make sure that it blended well. After that, spread the topping over the layer cake. For the simple topping, you can also spread the berry jam and sprinkle the fresh blueberries over the cheesecake layer.
