- A half cup of almonds
- A ¾ cups of walnuts
- A cup of Medjool Dates

For the cheesecake layer you need:
- Three cups of raw cashew nuts (soaked overnight with water)
- 1/3 cup of honey or maple syrup
- 1/3 coconut oil
- Four tablespoons of lime juice
- A pinch of salt
- A teaspoon of lime zest
Blueberry Topping :
- A cup of fresh blueberries or frozen blueberry
- Berry jam (optional)
1Before you make the cheesecake layer, you have to make the crust first. Put the almonds, walnuts, Medjool dates, and another crust ingredients into the food processor, and mix it all until it becomes crumbly. After that, press the mixture firmly into bottom of the springform pan, and put it in the freezer.
2After that, it is time to make the filling. Place the soaked cashew nuts into the food processor, and blend it until it smooth. If the chasew already smooth, then add the coconut oil, lime juice, a pinch of salt, a little bit of lime zest, and maple syrup or honey to be the sweetener. Blend it again until it is well mixed.
