How to make Cheesy Chicken Enchiladas

It is very easy to make this  Cheesy Chicken Enchiladas at home. Simply follow the recipe below from the beginning until the end.


  • Two cloves of minced garlic
  • 600 gr of enchilada sauce
  • Salt and grounded black pepper
  • Two pieces of chicken breasts with no bones and skins
  • 400 gr of cheddar jack cheese, shredded
  • Eight layers of flour tortillas
  • Cooking spray
  • 100 gr of chopped fresh cilantro


1The first thing to do, you need to heat the oven to 425 Fahrenheit-degree. Then, while waiting for the oven to get heat, you may prepare for other ingredients. Take a deep skillet and fill with enchilada sauce in it. After that, add with the minced garlic and heat until it gets boiled.

2For the chicken breasts, you need to season them with salt and pepper. Make sure you coat the chicken evenly, then put them into the skillet of enchilada sauce. Cook this mixture in a lower heat and don’t forget to put the lid on. It usually takes 15 to 20 minutes until the chicken is thoroughly cooked. Then, remove and shred the chicken meat. Here, you can use two forks to shred the meat easily.

3Prepare a baking dish with 9×13 inch side and coat the bottom with cooking spray. Next, leave it aside for a while. Meanwhile, you can prepare a large bowl with the reserved enchilada sauce in it along with the shredded chicken and a cup of cheese. Also, you may add a bit of cilantro if you want. Then, don’t forget to stir well.

4Take the tortillas and warm it in a microwave over high heat for only 30 seconds. Then, put around one-third cup of the chicken mixture into the centre of each tortilla. Next, roll the tortilla and place them in the prepared baking dish. Put the seam side down and do the same for the remaining tortillas.

5Before you bake the enchiladas, brush the surface with olive oil and bake for 8 to 10 minutes with no cover until the colour of the tortillas turns golden. After that, lower the heat to 400 degrees and pour the baking dish with the remaining enchiladas sauce along with the cheese on it. Then, put it back to the oven wrapped in aluminium foil for another 20 minutes.

When it is done,  remove the foil and bake again for only 5 to 10 minute until the cheese turns golden. Before serving, you also need to allow it to sit for another 10 minutes. Then, top with cilantro as the garnish and enjoy this with sour cream if you want.
