- 2 pounds of stew beef, sliced into 1-inch cubes
- 2 tbsp of olive oil
- 1 pound of red potatoes baby, striped and cut into a half or quartered
- one onion, diced
- three cloves of garlic, chop it
- four carrots, slices into ½ inch pieces
- 3 cups of beef broth
- 1 tbsp of dried thyme, chopped
- 1 tbsp of dried rosemary
- 1 tbsp of smoked paprika, diced
- 1 tbsp of caraway seeds (optional)
- 1 tbsp of Worcestershire sauce
- 2 tbsp of tomato paste
- two bay leaves
- ¼ cup of all-purpose flour
- 2 tbsp of fresh parsley leaves, chopped

1Mix the beef with paprika, salt, and pepper sufficiently. Pour the flour and shake off to make the mixture evenly. Heat olive oil in a large frying pan over the medium heat. Then, add the beef and cook. Allow them browned all the sides for about 3-4 minutes while turning the beef if needed.
2Remove from the pan and take into the 6-quart slow cooker, then add the potatoes, carrots, and onions. Stirring well to combine them, and set aside. Next, heat olive oil in a pan over the medium heat. Pour the tomato paste and stir slowly for about 1 minute until thickened.
3Add the flour and stir again until thickened. Then, add the beef broth, caraway seeds, dry thyme, salt and pepper to your taste. Allow them to simmer, while stirring well for about 4 minutes until smooth and thick. After that, remove from the pan and pour into slow cooker.
